Gluten-Free Chicken and Waffles

There are some foods you just don’t get to enjoy very often when you eat gluten-free. Chicken and waffles is one of those dishes for me. It’s the kind of fun, indulgent meal that feels like a special treat—and making it gluten-free means I don’t have to miss out.

These gluten-free chicken and waffles are made with oven-baked chicken and fluffy gluten-free waffles. They’re perfect for a weekend brunch when you want something a little different from the usual eggs and bacon.

Gluten-Free Chicken and Waffles

Instructions

  • Prepare the chicken according to the recipe. Cut the chicken breast into tenders instead of cutlets.
  • While the chicken is baking, prepare the waffle batter and make the waffles.
  • Top the waffles with chicken tenders.
  • Garnish with your favorite toppings.
  • Serve.

Notes

For this recipe, I used 4 chicken breasts cut into 3 tenders each and 1/2 of the breadcrumb mixture. 
Be sure to check labels and choose ingredients that are labeled gluten-free.
