Gluten-Free Honey Spice Cake

Ingredients

  • 240 g gluten-free flour such as King Arthur Measure for Measure
  • 1/3 cup sour cream
  • 2/3 cup packed brown sugar
  • 1/3 cup milk
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 large eggs
  • 1/2 cup honey
  • 1/3 cup vegetable oil
  • 1 cup chopped pecans

Instructions

  • Preheat the oven to 350°F. Grease a baking pan.
  • In a medium bowl, whisk together the gluten-free flour, baking powder, cinnamon, nutmeg, and cloves.
  • In a small saucepan over low heat, cook and stir the brown sugar and milk for 5 minutes, or until the sugar has dissolved. Remove from the heat and set aside to cool slightly.
  • In a separate large bowl, whisk together the eggs, honey, vegetable oil, and sour cream.
  • Slowly stir the warm brown sugar and milk mixture into the wet ingredients until well combined.
  • Gradually add the dry ingredients to the wet ingredients. Stir just until combined. Do not overmix.
  • Fold in the chopped pecans.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for 60–65 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes. Then, carefully turn it out onto a cooling rack and allow it to cool completely before slicing and serving.
