This Gluten-Free Chocolate Zucchini Bread started as a way to use up zucchini from the garden, but it quickly turned into an obsession. Gluten-free baking can be tricky, especially when you’re trying to create a loaf that’s moist, rich, and sturdy enough to slice beautifully. After plenty of testing, tweaking, and more than a few loaves, I finally landed on a recipe worth sharing.
The result is a chocolatey quick bread that stays tender, has just the right amount of sweetness, and makes a wonderful way to use fresh zucchini. Whether you’re gluten-free, have an overflowing garden, or simply love homemade baked goods, I think you’ll enjoy this one.
Gluten-Free Chocolate Zucchini Bread
Ingredients
- 1/2 cup unsweetened applesauce
- 1 1/2 cup grated zucchini
- 3 large eggs beaten
- 1/2 cup vegetable oil
- 1 cup brown sugar
- 1 cup gluten-free flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 350 degrees.
- Grease a 5“ x 9” loaf pan.
- In a mixing bowl, mix together applesauce, zucchini eggs, vegetable oil, and sugar.
- Add the dry ingredients and fold together until combined.
- Stir in the chocolate chips and the chopped walnuts.
- Pour the batter into the loaf pan.
- Bake for approximately 60-65 minutes until an inserted toothpick comes out clean.
- Cool on a wire rack in the pan for 10 minutes.
- Remove from the pan and continue to cool on the wire rack.
- Serve.
