Some nights call for complicated cooking… and some nights call for eggs, cheese, and whatever you already have in the fridge. This Ham & Cheddar Frittata falls firmly into the second category.
It’s the kind of recipe I turn to when I want something warm, filling, and homemade without turning dinner into a project. A few simple ingredients come together in one pan, and somehow it tastes like you put in far more effort than you actually did.
Ham & Cheddar Frittata

- 1 Tbs butter
- 8 large eggs
- 1 cup milk
- 1/2 tsp salt
- 1/4 tsp crushed red pepper

This Ham & Cheddar Frittata is one of those recipes that proves simple food really is the most comforting. It’s quick to pull together, flexible enough for whatever you have on hand, and hearty enough to serve for breakfast, brunch, or an easy dinner.
I love serving it straight from the skillet with something fresh on the side—like fruit, toast, or a simple green salad. It makes the meal feel complete without adding extra work, which is exactly the kind of cooking I’m always coming back to.
