Gluten-Free Chocolate Zucchini Bread

Ingredients

  • 1/2 cup unsweetened applesauce
  • 1 1/2 cup grated zucchini
  • 3 large eggs beaten
  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 1 cup gluten-free flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts

Instructions

  • Preheat the oven to 350 degrees.
  • Grease a 5“ x 9” loaf pan.
  • In a mixing bowl, mix together applesauce, zucchini eggs, vegetable oil, and sugar.
  • Add the dry ingredients and fold together until combined.
  • Stir in the chocolate chips and the chopped walnuts.
  • Pour the batter into the loaf pan.
  • Bake for approximately 60-65 minutes until an inserted toothpick comes out clean.
  • Cool on a wire rack in the pan for 10 minutes.
  • Remove from the pan and continue to cool on the wire rack.
  • Serve.

Notes

Be sure to read the labels for gluten-free. 
I used the King Arthur Gluten-Free Measure for Measure flour blend for this recipe.
