Chicken Bacon Ranch Quesadillas

Chicken Bacon Ranch Quesadillas are an easy gluten-free dinner that the whole family can enjoy. They combine seasoned chicken, crispy bacon, creamy ranch, and melted Monterey Jack cheese. Everything gets tucked inside a crispy tortilla. The result is a simple meal with plenty of flavor.

I love meals like this because they don’t require much fuss. The ingredients are familiar and easy to find. They also work well together. Chicken makes a budget-friendly base. Bacon, ranch, and cheese add plenty of flavor. These quesadillas are perfect for busy weeknights. You can prepare the chicken and bacon ahead of time. Then, dinner comes together quickly when you’re ready to eat. They also make a great lunch. You can even use leftover cooked chicken.

Since I cook gluten-free, I use gluten-free tortillas for this recipe. That makes dinner easier for everyone. There’s no need to prepare a completely separate meal. You can also customize these quesadillas to fit your family. Add jalapeños if you like some heat. Try a different cheese if Monterey Jack isn’t your favorite. Green onions or avocado would also make great toppings. I like to keep some extra ranch nearby for dipping.

Sometimes the best family dinners are the simplest ones. A few good ingredients can go a long way. These quesadillas are easy to make and easy to enjoy. They’re a great option when you want something filling without spending hours in the kitchen.

Chicken Bacon Ranch Quesadillas

Ingredients

  • 6 slices bacon
  • 3 chicken breasts cut into 2-inch pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin
  • 2 cups Monterey Jack cheese shredded
  • Ranch dip
  • Gluten-free tortillas
  • Butter for cooking

Instructions

  • Prepare the chicken by cutting the chicken breasts into 2-inch pieces and placing them in a bowl.
  • In a small bowl, combine the garlic powder, chili powder, salt, onion powder, black pepper, and cumin.
  • Season the chicken with the seasoning mixture, making sure the chicken is evenly coated.
  • In a large skillet over medium-low heat, cook the bacon until crispy. Transfer the bacon to a paper towel-lined plate to drain. Once cooled, crumble or chop the bacon.
  • Place the seasoned chicken into the same skillet. Cook for 10–15 minutes, flipping the chicken about halfway through. Keep the lid partially covering the skillet while the chicken cooks. Continue cooking until the chicken is cooked through.
  • Build each quesadilla by spreading ranch dip over half of a gluten-free tortilla. Add bacon, Monterey Jack cheese, and cooked chicken. Top with additional cheese, then fold the tortilla in half.
  • In a nonstick skillet, melt a small amount of butter over medium-low heat.
  • Place the quesadilla in the skillet. Cook for 2–3 minutes per side, or until the tortilla is golden brown and the cheese is melted and gooey. Use a spatula to carefully flip the quesadilla.
  • Allow the quesadilla to cool slightly. Cut into wedges and serve.
