Instant Pot Tomato & Feta Pasta

After a long day, nothing beats a quick, comforting meal that doesn’t require hours in the kitchen. This Instant Pot Tomato & Feta Pasta is the perfect solution for busy weeknights when you need something delicious and satisfying without the fuss.

Instant Pot Tomato & Feta Pasta

Equipment

  • 6 quart Instant Pot

Ingredients

  • 3 Tbs olive oil
  • 24 oz cherry tomatoes
  • 3 cloves garlic minced
  • 2 1/2 cups water
  • 1/4 tsp black pepper
  • 2 1/2 tsp chicken bouillon
  • 8 oz gluten-free penne pasta
  • 1/8 tsp crushed red pepper
  • 1 Tbs Italian seasoning
  • 1 Tbs dried basil
  • 1 1/2 cups feta
  • Feta and parsley garnish

Instructions

  • Measure the olive oil into the Instant Pot. Add in the tomatoes, minced garlic, and sprinkle with salt and pepper.
  • Stir in water and chicken bouillon. Add pasta, red pepper flakes, Italian seasoning, basil, and feta.
  • Put the lid on and lock it into place. Make sure the vent is sealed.
  • Press PRESSURE COOK. Select HIGH and adjust the time to 4 minutes.
  • Manually release the pressure. Unlock and remove the lid.
  • Salt and pepper to taste.
  • Garnish with feta and parsley.
  • Serve.
