Summer Salad

This refreshing green salad is perfect for summertime. It’s both light and filling. The sweetness of the fresh fruit, the saltiness of the feta cheese and the heat from the pepper jelly vinaigrette hits all of the flavors to keep this salad from being anything but boring.

Summer Salad

Ingredients

  • 10 oz spring mix salad
  • 1 23.5 oz mandarin oranges, drained reserving the juice
  • 2 large carrots peeled and grated
  • 1 large honey crisp apple
  • 1 1/2 cup feta cheese crumbles
  • 3/4 cup walnuts chopped

Instructions

  • Drain mandarins oranges and reserve the juice.
  • Peel and grate the carrots.
  • In a large bowl, toss together the spring mix salad, shredded carrots, and feta cheese.
  • Dice the apple and soak the pieces in the mandarin orange juice for about 1-2 minutes to keep them from turning. Use a slotted spoon to remove the apples from the juice. Pat dry with a paper towel.
  • Add fruit to the salad and gently toss.
  • Serve
