Summer Salad

- 10 oz spring mix salad
- 1 23.5 oz mandarin oranges, drained reserving the juice
- 2 large carrots peeled and grated
- 1 large honey crisp apple
- 1 1/2 cup feta cheese crumbles
- 3/4 cup walnuts chopped
Drain mandarins oranges and reserve the juice.
Peel and grate the carrots.
In a large bowl, toss together the spring mix salad, shredded carrots, and feta cheese.
Dice the apple and soak the pieces in the mandarin orange juice for about 1-2 minutes to keep them from turning. Use a slotted spoon to remove the apples from the juice. Pat dry with a paper towel.
Add fruit to the salad and gently toss.
Serve
