Spicy Cucumber Salad
Ingredients
- 4 large cucumbers thinly sliced
- 1 small sweet onion quartered and thinly sliced
- 1 cup apple cider vinegar
- 1/2 cup water
- 1/4 cup sugar
- 1/2 Tbs dried dill
- 1 tsp crushed red pepper
- Salt and pepper to taste
Instructions
- Place the sliced cucumbers and onions in a heat safe bowl. In a small saucepan, mix together the vinegar, sugar, water, dill, and red pepper.
- Heat until sugar has dissolved.
- Pour over the cucumbers and onions.
- Toss the vegetables with the dressing. Salt and pepper to taste.
- Place in an airtight container and refrigerate for a minimum of 30 minutes.
- Serve.
