Spicy Cucumber Salad

Ingredients

  • 4 large cucumbers thinly sliced
  • 1 small sweet onion quartered and thinly sliced
  • 1 cup apple cider vinegar
  • 1/2 cup water
  • 1/4 cup sugar
  • 1/2 Tbs dried dill
  • 1 tsp crushed red pepper
  • Salt and pepper to taste

Instructions

  • Place the sliced cucumbers and onions in a heat safe bowl. In a small saucepan, mix together the vinegar, sugar, water, dill, and red pepper.
  • Heat until sugar has dissolved.
  • Pour over the cucumbers and onions.
  • Toss the vegetables with the dressing. Salt and pepper to taste.
  • Place in an airtight container and refrigerate for a minimum of 30 minutes.
  • Serve.
