Rose Thicket Crackers

Finally a gluten-free cracker with flavor! I miss having access to crackers with different spices. If you are like me, we are limited by availability at the store. I wanted a cracker that was both crisp and flavorful. I use these to make canapés and they are great for charcuterie boards.

Rose Thicket Crackers

Ingredients

  • 1/2 cup gluten-free flour
  • 1/2 cup almond flour
  • 1 Tbs golden ground flax meal
  • 1/2 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1 tsp dried rosemary
  • 1 Tbs everything bagel seasoning
  • 1 large egg white
  • 1/4 tsp xanthan gum
  • 1/4 tsp scant baking soda
  • 1/4 cup water
  • 1/2 tsp olive oil

Instructions

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • In a medium size bowl, sift flour and almond flour. Mix in the remaining dry ingredients. Stir to combine.
  • Add wet ingredients and mix. Use hands to knead the dough and shape into a ball.
  • Use a rolling pin to thinly roll the dough to about 1/8 of an inch.
  • Cut circles with a 2 inch round cutter. Use a fork to pierce the crackers.
  • Place on the lined baking sheet.
  • Bake for 25 minutes until slightly golden. Rotate pan halfway through baking.
  • Cool on a baking sheet for 10 minutes.
