Lentils & Sausage

This is simple dish is full of flavor with the heat from the sausage counter-balancing the earthiness of the lentils it is sure to please. This is suitable as a main dish on its own or can be served with a flaky fish like cod or salmon.

Lentils & Sausage

Servings: 8 people

Ingredients

  • 1 pound brown lentils
  • 1 pound hot Italian sausage
  • 1 carrot peeled and finely diced
  • 1 medium onion diced
  • 1 tsp Italian seasoning
  • 1 clove garlic minced
  • 8 cups chicken broth
  • Salt & pepper
  • Parmesan cheese for garnish

Instructions

  • In a Dutch-oven, brown the sausage. Add the vegetables and cook until softened.
  • Rinse the lentils and add to the Dutch-oven with chicken broth and Italian seasoning. Salt and pepper to taste.
  • Bring to a boil, reduce heat and simmer for about an hour and a half or until tender.
  • Skim any fat off the surface of the water.
  • Garnish with grated Parmesan cheese if desired and serve.
