This is simple dish is full of flavor with the heat from the sausage counter-balancing the earthiness of the lentils it is sure to please. This is suitable as a main dish on its own or can be served with a flaky fish like cod or salmon.
Lentils & Sausage
Ingredients
- 1 pound brown lentils
- 1 pound hot Italian sausage
- 1 carrot peeled and finely diced
- 1 medium onion diced
- 1 tsp Italian seasoning
- 1 clove garlic minced
- 8 cups chicken broth
- Salt & pepper
- Parmesan cheese for garnish
Instructions
- In a Dutch-oven, brown the sausage. Add the vegetables and cook until softened.
- Rinse the lentils and add to the Dutch-oven with chicken broth and Italian seasoning. Salt and pepper to taste.
- Bring to a boil, reduce heat and simmer for about an hour and a half or until tender.
- Skim any fat off the surface of the water.
- Garnish with grated Parmesan cheese if desired and serve.
