Lentils & Sausage

- 1 pound brown lentils
- 1 pound hot Italian sausage
- 1 carrot peeled and finely diced
- 1 medium onion diced
- 1 tsp Italian seasoning
- 1 clove garlic minced
- 8 cups chicken broth
- Salt & pepper
- Parmesan cheese for garnish
In a Dutch-oven, brown the sausage. Add the vegetables and cook until softened.
Rinse the lentils and add to the Dutch-oven with chicken broth and Italian seasoning. Salt and pepper to taste.
Bring to a boil, reduce heat and simmer for about an hour and a half or until tender.
Skim any fat off the surface of the water.
Garnish with grated Parmesan cheese if desired and serve.
