Lemon Roasted Asparagus
Ingredients
- 1 bunch ~1 pound asparagus, trimmed
- 1/2 lemon
- 1/8 tsp crushed red pepper
- 1 Tbs olive oil
- Salt and pepper to taste
- grated Parmesan cheese garnish
Instructions
- Adjust the rack to about 6 inches from the broiler and heat.
- Mix the olive oil and red pepper flakes together.
- Toss the asparagus with the olive oil and red pepper flakes.
- Salt and pepper the asparagus to taste.
- Lay the asparagus on a baking sheet in a single layer.
- Broil the asparagus, until they are tender and lightly browned, about ten minutes. Shake the pan occasionally during the cook time.
- Remove from the oven and squeeze the lemon juice over the top. Shake the pan to toss the asparagus and lemon juice together.
- Garnish with grated Parmesan cheese.
- Serve.
