Lemon Roasted Asparagus

Ingredients

  • 1 bunch ~1 pound asparagus, trimmed
  • 1/2 lemon
  • 1/8 tsp crushed red pepper
  • 1 Tbs olive oil
  • Salt and pepper to taste
  • grated Parmesan cheese garnish

Instructions

  • Adjust the rack to about 6 inches from the broiler and heat.
  • Mix the olive oil and red pepper flakes together.
  • Toss the asparagus with the olive oil and red pepper flakes.
  • Salt and pepper the asparagus to taste.
  • Lay the asparagus on a baking sheet in a single layer.
  • Broil the asparagus, until they are tender and lightly browned, about ten minutes. Shake the pan occasionally during the cook time.
  • Remove from the oven and squeeze the lemon juice over the top. Shake the pan to toss the asparagus and lemon juice together.
  • Garnish with grated Parmesan cheese.
  • Serve.
