Nothing says summer like the smell of food cooking on the grill and the sounds of laughter as families gather together. During the summer, we enjoy spending time outdoors. We play lawn games and put the grill to good use. Cooking outdoors cuts down on clean-up and doesn’t heat the house. One of our favorite meals is our Greek chicken kebabs.
The kebabs take a minimum of forty-five minutes to marinate in the refrigerator. That’s the longest part of the prep time. I mix it up earlier in the day so it’s ready when I want to marinade the chicken. I often pair this with my classic potato salad which is a wonderful make-ahead side dish. You can find my recipe here. I like to have my side dishes already assembled so I can stay out of the kitchen and outside with my family.
While the kebabs are marinating, I decorate my outdoor table. This is one of my favorite parts to prep when we grill out. Taking the time to add elegant touches to our table makes the meal even more special. Our place settings are melamine and that makes eating outdoors super kid-friendly. Greek Chicken Kebabs
Ingredients
- 1 3/4 Pounds Boneless, skinless chicken breast, diced into 1 1/4 inch cubes
- 1/4 Cup + 2 Tbsp olive oil
- 2 Tbsp Olive oil
- 3 Tbsp Fresh lemon juice
- 1 Tbs Red wine vinegar
- 3 Cloves Garlic, minced
- 2 Tsp Dried oregano
- 1/2 Tsp Dried basil
- 1/2 Tsp Dried thyme
- 1/2 Tsp Ground coriander
- Salt and Pepper to taste
- Bamboo skewers
Instructions
- In a bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, basil, thyme, coriander, and season with salt and pepper.
- Place the diced chicken in a gallon size resealable bag, pour marinade over chicken and shake. Refrigerate for 45 mins up to 2 hours.
- Pull chicken out of the refrigerator to come to room temperature. Soak skewers in water for about 15-30 minutes.
- Place chicken on skewers.
- Grill on medium-high heat until done.
