Greek Chicken Kebabs

Ingredients

  • 1 3/4 Pounds Boneless, skinless chicken breast, diced into 1 1/4 inch cubes
  • 1/4 Cup + 2 Tbsp olive oil
  • 2 Tbsp Olive oil
  • 3 Tbsp Fresh lemon juice
  • 1 Tbs Red wine vinegar
  • 3 Cloves Garlic, minced
  • 2 Tsp Dried oregano
  • 1/2 Tsp Dried basil
  • 1/2 Tsp Dried thyme
  • 1/2 Tsp Ground coriander
  • Salt and Pepper to taste
  • Bamboo skewers

Instructions

  • In a bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, basil, thyme, coriander, and season with salt and pepper.
  • Place the diced chicken in a gallon size resealable bag, pour marinade over chicken and shake. Refrigerate for 45 mins up to 2 hours.
  • Pull chicken out of the refrigerator to come to room temperature. Soak skewers in water for about 15-30 minutes.
  • Place chicken on skewers.
  • Grill on medium-high heat until done.
