Gluten-Free Banana Nut Bread

This classic banana nut bread has been reimagined to suit a gluten-free lifestyle, allowing everyone to indulge without compromise. With its moist texture, rich banana flavor, and satisfying crunch from the nuts, this bread is perfect for breakfast or brunch. Gluten-Free Banana Nut Bread

Ingredients

  • 4 ripe bananas about 2 cups mashed
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 3/4 cup sugar
  • 1/8 tsp salt
  • 3 large eggs beaten
  • 1 tsp vanilla
  • 1 cup pecans crushed into large pieces
  • 2 cups gluten-free flour
  • 1/2 tsp xanthan gum Omit if included in your flour blend.
  • 1/2 cup unsweetened applesauce

Instructions

  • Preheat the oven to 350 degrees.
  • Grease a 5“ x 9” loaf pan.
  • In a mixing bowl, use a fork to mash the bananas. Stir in the sugar, applesauce, vanilla, eggs, and oil.
  • Add the dry ingredients and fold together until combined.
  • Stir in the crushed pecans.
  • Pour the batter into the loaf pan.
  • Bake for approximately 80 minutes until an inserted toothpick comes out clean.
  • Cool on a wire rack in the pan for 10 minutes.
  • Remove from the pan and continue to cool on the wire rack.
  • Serve.

Be sure to read the labels for gluten-free.
