Garlic and Herb Potatoes
Ingredients
- 1 1/2 pounds red potatoes
- 1 clove garlic minced
- 3 Tbs olive oil
- 1 Tbs butter
- 1 tsp salt
- 1 tsp dried chives
- 1 Tbs dried parsley
Instructions
- Wash and cut the potatoes into 1 inch pieces. Add to a 2 quart pot and cover with water.
- Bring to a boil and let cook for about 10 minutes until fork tender.
- In a microwave safe dish, melt the butter. Stir in the olive oil, garlic, salt, chives, and parsley.
- Once the potatoes are tender, drain and toss the potatoes in the sauce.
- Serve
