Garlic and Herb Potatoes

Ingredients

  • 1 1/2 pounds red potatoes
  • 1 clove garlic minced
  • 3 Tbs olive oil
  • 1 Tbs butter
  • 1 tsp salt
  • 1 tsp dried chives
  • 1 Tbs dried parsley

Instructions

  • Wash and cut the potatoes into 1 inch pieces. Add to a 2 quart pot and cover with water.
  • Bring to a boil and let cook for about 10 minutes until fork tender.
  • In a microwave safe dish, melt the butter. Stir in the olive oil, garlic, salt, chives, and parsley.
  • Once the potatoes are tender, drain and toss the potatoes in the sauce.
  • Serve
