I grew up in Louisiana and there’s nothing better than a delicious pot of red beans and rice. This dish takes some planning because it’s important to soak the beans in water overnight. Make sure to add enough water to the pot to cover the beans.
To elevate the presentation, I used my au gratin dishes to serve. I found this set on Amazon. They are perfect for serving the right portion. The dishes are also dishwasher safe which is a plus for easy clean-up.
Creole Red Beans
Ingredients
- 1 TBS butter
- 1 large onion, chopped
- 2 celery stalks, chopped
- 1 tsp cayenne pepper
- 4 bay leaves
- 4 sprigs fresh thyme or 1 tsp dried
- 1 pound red beans
- 2-3 cloves garlic, chopped
- 10 cups chicken broth or water
- Salt to taste
Instructions
- Rinse the red beans and remove any debris. Soak in water overnight.
- Before cooking drain the beans and add the water or chicken broth to the pot.
- In a skillet, melt the butter. Add the onion and celery and cook until vegetables are soft. Then season with salt and cayenne.
- Add the remaining ingredients to the pot.
- Bring to a boil and simmer for 3 hours until beans are tender. Stir occasionally during cooking time.
Notes
- Be sure to soak the beans in water overnight.
- Serve with rice.
- This dish can be served with andouille or kielbasa sausage.
- Leftovers can be frozen.
