Creole Red Beans

- 1 TBS butter
- 1 large onion, chopped
- 2 celery stalks, chopped
- 1 tsp cayenne pepper
- 4 bay leaves
- 4 sprigs fresh thyme or 1 tsp dried
- 1 pound red beans
- 2-3 cloves garlic, chopped
- 10 cups chicken broth or water
- Salt to taste
Rinse the red beans and remove any debris. Soak in water overnight.
Before cooking drain the beans and add the water or chicken broth to the pot.
In a skillet, melt the butter. Add the onion and celery and cook until vegetables are soft. Then season with salt and cayenne.
Add the remaining ingredients to the pot.
Bring to a boil and simmer for 3 hours until beans are tender. Stir occasionally during cooking time.
- Be sure to soak the beans in water overnight.
- Serve with rice.
- This dish can be served with andouille or kielbasa sausage.
- Leftovers can be frozen.
