Cottage Bake

Ingredients

  • 1 Tbs vegetable oil
  • 1 medium onion chopped
  • 32 oz about 4 cups tater tots, thawed
  • 8 oz diced ham
  • 6 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 3/4 tsp garlic powder
  • 1/2 tsp pepper
  • 1 Tbs parsley flakes
  • 1 1/2 cup shredded cheddar

Instructions

  • Preheat the oven to 350 degrees.
  • In a microwave safe bowl, add the vegetable oil, garlic powder and pepper. Cook until onions are translucent about 8 minutes. Stirring occasionally about every 1-2 minutes of cook time. Stir in the diced ham.
  • Completely line an 11 x 7 casserole dish with tater tots.
  • Pour the ham and onion mixture over the top of the tater tots.
  • In a bowl, beat together the eggs, sour cream, heavy cream, parsley until blended. Stir in the cheese.
  • Pour the egg mixture over the top of the tater tots.
  • Bake uncovered for 35-40 minutes or until the top is golden brown.
  • Serve.
