Veggie Chopped Salad
Ingredients
- 1 head cauliflower cored and chopped
- 2 heads broccoli chopped
- 8 medium stalks celery thinly sliced
- 8 oz frozen peas thawed
- 2.5 oz real bacon bits
- 1 1/3 cups mayonnaise
- 1/4 cup sugar
- 2 Tbs parmesan cheese grated
- 1 Tbs apple cider vinegar
- 1/4 tsp salt
- 3/4 cup salted peanuts chopped
Instructions
- In a small bowl, mix mayonnaise, sugar, parmesan cheese, apple cider vinegar, salt, and bacon bits until blended. Set the dressing aside.
- In a large bowl, combine the chopped broccoli, cauliflower, celery, and peas.
- Pour the dressing over the chopped vegetables and toss to combine.
- Cover the bowl and refrigerate for at least 30 minutes.
- Just before serving, stir in the peanuts.
- Serve.
