Veggie Chopped Salad

Ingredients

  • 1 head cauliflower cored and chopped
  • 2 heads broccoli chopped
  • 8 medium stalks celery thinly sliced
  • 8 oz frozen peas thawed
  • 2.5 oz real bacon bits
  • 1 1/3 cups mayonnaise
  • 1/4 cup sugar
  • 2 Tbs parmesan cheese grated
  • 1 Tbs apple cider vinegar
  • 1/4 tsp salt
  • 3/4 cup salted peanuts chopped

Instructions

  • In a small bowl, mix mayonnaise, sugar, parmesan cheese, apple cider vinegar, salt, and bacon bits until blended. Set the dressing aside.
  • In a large bowl, combine the chopped broccoli, cauliflower, celery, and peas.
  • Pour the dressing over the chopped vegetables and toss to combine.
  • Cover the bowl and refrigerate for at least 30 minutes.
  • Just before serving, stir in the peanuts.
  • Serve.
