Egg Roll in a Bowl
Ingredients
- 2 Tbs sesame oil
- 1 pound ground pork
- 3 cloves garlic minced
- 1 1/2 tsp fresh ginger grated
- 5 stalks green onions separated and chopped on the bias
- 1 medium onion finely diced
- 1 Tbs garlic chili sauce
- 1 (14 oz) bag coleslaw or shredded cabbage
- 3 Tbs gluten-free soy sauce
- 1 Tbs rice wine vinegar
- 2 Tbs sesame seeds toasted
- Salt & pepper to taste
Instructions
- In a large skillet, heat sesame oil over medium-high heat.
- Add in the onion and white portion of the green onions. Cook until the onions are tender.
- Stir in the garlic and heat until fragrant.
- Add in the ground pork, ginger, garlic chili sauce, and salt & pepper to taste.
- Stir coleslaw mix, gluten-free soy sauce, and rice wine vinegar. Cover and cook until the coleslaw is tender. Stir occasionally.
- Garnish with green onions and toasted sesame seeds.
- Serve with rice.
