Egg Roll in a Bowl

Ingredients

  • 2 Tbs sesame oil
  • 1 pound ground pork
  • 3 cloves garlic minced
  • 1 1/2 tsp fresh ginger grated
  • 5 stalks green onions separated and chopped on the bias
  • 1 medium onion finely diced
  • 1 Tbs garlic chili sauce
  • 1 (14 oz) bag coleslaw or shredded cabbage
  • 3 Tbs gluten-free soy sauce
  • 1 Tbs rice wine vinegar
  • 2 Tbs sesame seeds toasted
  • Salt & pepper to taste

Instructions

  • In a large skillet, heat sesame oil over medium-high heat.
  • Add in the onion and white portion of the green onions. Cook until the onions are tender.
  • Stir in the garlic and heat until fragrant.
  • Add in the ground pork, ginger, garlic chili sauce, and salt & pepper to taste.
  • Stir coleslaw mix, gluten-free soy sauce, and rice wine vinegar. Cover and cook until the coleslaw is tender. Stir occasionally.
  • Garnish with green onions and toasted sesame seeds.
  • Serve with rice.
