In a large skillet, heat sesame oil over medium-high heat.
Add in the onion and white portion of the green onions. Cook until the onions are tender.
Stir in the garlic and heat until fragrant.
Add in the ground pork, ginger, garlic chili sauce, and salt & pepper to taste.
Stir coleslaw mix, gluten-free soy sauce, and rice wine vinegar. Cover and cook until the coleslaw is tender. Stir occasionally.
Garnish with green onions and toasted sesame seeds.
Serve with rice.
