Slow Cooker Beef and Gravy

Slow Cooker Beef and Gravy

Ingredients

  • 2 pounds stew meat
  • 1 Tbs Cajun seasoning
  • 1 Tbs vegetable oil
  • 1 medium sweet onion chopped
  • 1 small jalapeño finely diced
  • 2 medium stalks celery finely diced
  • 3 cloves garlic minced
  • 8 oz mushrooms finely diced using a food processor
  • 2 cups beef stock
  • 1 tsp hot sauce
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • 2 Tbs Worcestershire sauce
  • 3 Tbs cornstarch

Instructions

  • Mix together cornstarch, beef stock, Worcestershire and hot sauce together in a bowl. Stir until smooth.
  • In a microwave safe bowl, add the vegetable oil, onion, jalapeño, celery, garlic, rosemary, thyme, and Cajun seasoning. Cook until onions are translucent about 8 minutes. Stirring occasionally about every 1-2 minutes of cook time.
  • Stir into the slow cooker.
  • Add the meat, mushrooms, and beef stock mixture to the slow cooker and stir.
  • Salt and pepper to taste.
  • Cook on low for 6-8 hours until tender.
  • Serve with rice.
