Are you looking for a new spin on twice-baked potatoes? These Chicken & Bacon Stuffed Potatoes are so delicious and full of flavor. I love to serve them with a salad to make a complete meal. They also reheat well for an easy lunch prep. This is a meal that will easily become a family favorite.
Chicken & Bacon Stuffed Potatoes
Ingredients
- 3 large (~1 pound) Russet potatoes Baked
- 1 cup rotisserie chicken chopped
- 1 cup sharp cheddar grated
- 4 slices of bacon cooked and crumbled
- 1 1/2 cup sour cream
- 3 green onions chopped
- 2 Tbs ranch powder
- Grated sharp cheddar for topping
- Green onions for garnish
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a bowl, mix sour cream, bacon, rotisserie chicken, green onions, ranch, and cheese.
- Half the already baked potatoes and scoop out the filling into the bowl. Stir until thoroughly combined.
- Spoon filling into the potato halves.
- Sprinkle the top with shredded cheese.
- Bake for 20 minutes until cheese is melted.
- Garnish with sliced green onions and serve.
