Chicken & Bacon Stuffed Potatoes

Are you looking for a new spin on twice-baked potatoes? These Chicken & Bacon Stuffed Potatoes are so delicious and full of flavor. I love to serve them with a salad to make a complete meal. They also reheat well for an easy lunch prep. This is a meal that will easily become a family favorite.

Chicken & Bacon Stuffed Potatoes

Servings: 6 Servings

Ingredients

  • 3 large (~1 pound) Russet potatoes Baked
  • 1 cup rotisserie chicken chopped
  • 1 cup sharp cheddar grated
  • 4 slices of bacon cooked and crumbled
  • 1 1/2 cup sour cream
  • 3 green onions chopped
  • 2 Tbs ranch powder
  • Grated sharp cheddar for topping
  • Green onions for garnish

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a bowl, mix sour cream, bacon, rotisserie chicken, green onions, ranch, and cheese.
  • Half the already baked potatoes and scoop out the filling into the bowl. Stir until thoroughly combined.
  • Spoon filling into the potato halves.
  • Sprinkle the top with shredded cheese.
  • Bake for 20 minutes until cheese is melted.
  • Garnish with sliced green onions and serve.
