Oatmeal bars are one of my meal-prepping staples. It’s such a versatile recipe and the combinations are endless. This recipe was easy to adjust to my food allergies. It’s a perfect way to use leftover bananas from the freezer. In the morning, I reheat the bars in the microwave for about 45 -6o seconds.

Low Sugar Oatmeal Bars
Servings: 8 servings
Ingredients
- 3 cups old fashioned oats
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 3 large overripe bananas
- 1 cup milk
- 2 large eggs
- 1/4 cup maple syrup
- 2 tsp vanilla extract
- 1/2 cup chopped walnuts
- 1/4 cup dried blueberries
Instructions
- Preheat the oven to 350 degrees.
- Line an 8×8 baking dish with parchment paper. Allow excess to hang over the sides so you can remove the bars from the dish.
- Add the first four ingredients to a mixing bowl. Stir until combined.
- Add bananas, milk, eggs, vanilla extract and mix until thoroughly combined.
- Using a spatula, stir in chopped nuts and dried fruit.
- Pour the mixture into the prepared baking dish.
- Bake for 45 minutes. Let cool before slicing.
Notes
- Any combination of chopped nuts or dried fruit can be used.
- To make this gluten-free, be sure to check the product labels.
