Low Sugar Oatmeal Bars

Oatmeal bars are one of my meal-prepping staples. It’s such a versatile recipe and the combinations are endless. This recipe was easy to adjust to my food allergies. It’s a perfect way to use leftover bananas from the freezer. In the morning, I reheat the bars in the microwave for about 45 -6o seconds.

Ingredients

  • 3 cups old fashioned oats
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3 large overripe bananas
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • 1/4 cup dried blueberries

Instructions

  • Preheat the oven to 350 degrees.
  • Line an 8×8 baking dish with parchment paper. Allow excess to hang over the sides so you can remove the bars from the dish.
  • Add the first four ingredients to a mixing bowl. Stir until combined.
  • Add bananas, milk, eggs, vanilla extract and mix until thoroughly combined.
  • Using a spatula, stir in chopped nuts and dried fruit.
  • Pour the mixture into the prepared baking dish.
  • Bake for 45 minutes. Let cool before slicing.

Notes

  • Any combination of chopped nuts or dried fruit can be used.
  • To make this gluten-free, be sure to check the product labels.
