Preheat the oven to 350 degrees.
Line an 8x8 baking dish with parchment paper. Allow excess to hang over the sides so you can remove the bars from the dish.
Add the first four ingredients to a mixing bowl. Stir until combined.
Add bananas, milk, eggs, vanilla extract and mix until thoroughly combined.
Using a spatula, stir in chopped nuts and dried fruit.
Pour the mixture into the prepared baking dish.
Bake for 45 minutes. Let cool before slicing.
