Preheat the oven to 350°F. Score the fat on the pork chops and season both sides generously with salt and pepper.
Pour the vegetable oil into the bottom of a baking dish. Arrange the seasoned pork chops in the dish.
Combine the brown sugar and hot honey in a small microwave-safe bowl. Microwave for about 20 seconds, then stir until the sugar begins to dissolve.
Pour the hot honey mixture evenly over the pork chops.
Bake for 20–30 minutes, or until the pork reaches an internal temperature of 145°F.
Turn the oven to broil. Broil the pork chops for 5–7 minutes, watching closely, until the glaze is caramelized and the tops are nicely browned.
Remove from the oven and let the pork chops rest for 3–5 minutes before serving.
