Every summer my family anticipates the arrival of fresh watermelon. We eagerly await the opportunity to cut into this summertime treat. This watermelon caprese skewer is a sweet and savory summer classic. The fruit paired with the creamy mozzerella, salty ham, and fresh basil is wonderful. The addition of the balsamic glaze adds a tangy punch that brings the whole dish together. It’s perfect for your next cookout.
Watermelon Caprese Skewers
Ingredients
- 24 4 1/2 inch bamboo skewers
Skewers
- 48 Watermelon balls
- 8 slices Ham
- 8 oz Fresh mozzarella ciliegine
- 24 Fresh basil leaves
Balsamic Glaze
- 1 cup balsamic vinegar
- 1/4 cup brown sugar
- 1 pinch dried tarragon
- 1 pinch salt
Instructions
Balsamic Glaze
- Add balsamic vinegar, brown sugar, tarragon and salt to a saucepan. Bring to a boil and reduce to simmer.
- Cook for about 20 minutes or until mixture has reduced to half. It should coat a spoon after being cooled.
- Set aside and let it cool completely while preparing the rest of the ingredients.
Skewers
- Drain the liquid from the mozzarella and set aside.
- Prepare melon balls.
- Roll the slices of ham and cut into thirds.
- Wash and dry basil leaves.
Assembly
- Skewer watermelon ball.
- Fold a basil leaf into thirds and place on skewer.
- Add the mozzarella.
- Skewer the ham.
- Finish the skewer with a watermelon ball.
- Repeat the process until all the skewers have been constructed.
- Arrange on tray.
- Use a spoon to drizzle the balsamic glaze over the skewers.
- Serve.
