Lime & Jalapeño Coleslaw
Ingredients
- 2 (5.3 oz) containers plain Greek yogurt
- 4 Tbs olive oil
- 2 clove garlic peeled
- 2 medium medium jalapeños seeded
- 1/2 tsp kosher salt
- 3 small limes juiced and zested
- 2 (8 oz) packages shredded cabbage
Instructions
- In a food processor mix together Greek yogurt, olive oil, garlic, jalapeño, lime zest, lime juice, and salt.
- In a bowl mix together shredded cabbage and the sauce.
- Place the coleslaw in an airtight container.
- Let rest in refrigerator for at least 30 minutes. The flavor develops during that time.
- Serve.
