Gluten-Free Peach Cobbler

There are some recipes that just taste like home. This gluten-free peach cobbler is one of them. My dad used to make peach cobbler like this when I was growing up. His wasn’t gluten-free, but this version still takes me right back to those days.

I love that this gluten-free peach cobbler uses canned peaches. You don’t have to wait for peach season or have fresh peaches on hand. You can make a warm, homemade dessert whenever the craving hits. The peaches bake into a sweet, juicy filling. The golden topping adds just the right amount of buttery sweetness. It’s simple, comforting, and easy to share.

Serve it warm with a scoop of vanilla ice cream for a classic Southern dessert. It’s just as welcome at a family dinner as it is at a weekend gathering.

Gluten-Free Peach Cobbler

Ingredients

  • 1 (15 oz) can sliced peaches in 100% juice (do not drain)
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1 cup gluten-free flour
  • 1 cup milk
  • 2 tsp baking powder
  • 1 pinch salt

Instructions

  • Preheat the oven to 350°F.
  • Melt the butter. Slice the butter into pieces and place them evenly across the bottom of a 9×9-inch baking pan. Place the pan in the oven and allow the butter to melt completely.
  • In a medium bowl, combine the sugar, gluten-free flour, milk, salt, and baking powder. Stir until smooth and no lumps remain.
  • Carefully remove the pan from the oven once the butter has melted. Pour the batter over the melted butter. Use a spatula to gently spread the batter across the bottom of the pan.
  • Spoon the peaches and their juice over the top of the batter. Do not stir. The peaches and juice should remain on top of the batter. Pour any remaining juice evenly over the peaches.
  • Return the pan to the oven and bake for 40 minutes, or until the cobbler is golden and cooked through.
  • Serve. Remove from the oven and allow it to cool slightly before serving. Serve warm, with vanilla ice cream if desired.

I used King Arthur Gluten-Free Measure Flour when making this recipe. If you use a different gluten-free flour blend, results may vary.
