Dijon Boiled Potatoes
Ingredients
- 1 1/2 pounds small golden potatoes cut in half
- 1 tsp dijon mustard
- 2 Tbs olive oil
- 2 Tbs butter melted
- 1 tsp dried dill
- 1 tsp salt
- 1/2 tsp thyme
Instructions
- Wash and cut the potatoes into 1 inch pieces. Add to a 2 quart pot and cover with water.
- Bring to a boil and let cook for about 10 minutes until fork tender.
- In a microwave safe dish, melt the butter. Stir in the olive oil, dill, thyme, salt, and dijon mustard.
- Once the potatoes are tender, drain and toss the potatoes in the sauce.
- Serve
