Pinwheels are one of my favorite appetizers to make. These Chicken Quesadilla Pinwheels are a flavorful mix of chicken and spices. Adding black beans and corn gives these pinwheels a pleasant texture and enhances the flavor. This appetizer is so easy to make and can be prepared in advance. They are sure to please any crowd.
Chicken Quesadilla Pinwheels
Ingredients
- 1 cup rotisserie chicken chopped
- 8 oz cream cheese softened
- 1/2 tsp garlic powder
- 2 tsp paprika
- 3 Tbs minced jalapeños
- 3 Tbs jalapeño juice
- 1/2 tsp cayenne pepper
- 2 tsp cumin
- 1 tsp sugar
- 1 cup Mexican style shredded cheese
- flour tortillas Substitute for gluten-free
- 1/2 can black beans, drained and rinsed
- 1/2 can corn, drained
Instructions
- Drain and rinse the black beans and set aside. Next, drain the corn and set aside.
- In a stand mixer, whip the cream cheese for about 2-3 minutes. Mix thoroughly with the remaining ingredients (except the tortillas, black beans, and corn).
- Using a spatula, stir in the black beans and corn.
- Spread the mixture over the tortillas.
- Roll and cut into pinwheels.
- Serve.
