Chicken Quesadilla Pinwheels

Pinwheels are one of my favorite appetizers to make. These Chicken Quesadilla Pinwheels are a flavorful mix of chicken and spices. Adding black beans and corn gives these pinwheels a pleasant texture and enhances the flavor. This appetizer is so easy to make and can be prepared in advance. They are sure to please any crowd.

Chicken Quesadilla Pinwheels

Servings: 4 Dozen

Ingredients

  • 1 cup rotisserie chicken chopped
  • 8 oz cream cheese softened
  • 1/2 tsp garlic powder
  • 2 tsp paprika
  • 3 Tbs minced jalapeños
  • 3 Tbs jalapeño juice
  • 1/2 tsp cayenne pepper
  • 2 tsp cumin
  • 1 tsp sugar
  • 1 cup Mexican style shredded cheese
  • flour tortillas Substitute for gluten-free
  • 1/2 can black beans, drained and rinsed
  • 1/2 can corn, drained

Instructions

  • Drain and rinse the black beans and set aside. Next, drain the corn and set aside.
  • In a stand mixer, whip the cream cheese for about 2-3 minutes. Mix thoroughly with the remaining ingredients (except the tortillas, black beans, and corn).
  • Using a spatula, stir in the black beans and corn.
  • Spread the mixture over the tortillas.
  • Roll and cut into pinwheels.
  • Serve.
