This classic dish is a perfect blend of earthy broccoli flavor, rich cheddar cheese, and savory seasonings, creating a velvety texture that warms both the body and soul. It’s simple to prepare, making it an ideal choice for both weeknight dinners and special occasions.
Broccoli and Cheese Soup
Ingredients
- 1/4 cup butter
- 2 Tbs olive oil
- 1 small onion diced
- 1/2 tsp salt
- 1 tsp Cajun seasoning
- 1/2 tsp thyme
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 cup Vermouth
- 1/4 cup gluten-free flour
- 2 cups milk
- 2 cups chicken broth
- 1 (16 oz) bag broccoli florets, thawed
- Salt and pepper to taste
- 4 cups shredded extra sharp cheese divided
- Fresh parsley for garnish
Instructions
- In a 3 1/2 quart Dutch oven over medium heat, add butter, oil, onion, and 1/2 tsp salt. Cook covered for 8 minutes, stirring occasionally. Uncover and add Cajun seasoning, garlic, thyme, smoked paprika and continue cooking until the onions are tender. About another 5 minutes.
- Stir in the gluten-free flour and mix until thoroughly combined.
- Add the Vermouth and let it come to a simmer. Pour in the chicken broth and milk, stir constantly. Bring to a boil. Stir in the broccoli and reduce the heat until it simmers.
- Use an immersion blender and blend to desired consistency.
- Add 3 cups of shredded cheese and stir until incorporated.
- Salt and pepper to taste.
- Use the remaining cheese and parsley to garnish.
- Serve.
