If you love boudin and you’re looking for a fun way to serve it, these Boudin Quesadillas are a must-try! Crispy gluten-free tortillas are filled with savory boudin and plenty of melty pepper jack cheese, then served with a sweet and tangy pepper jelly sauce for dipping.
The combination of flavors is a little unexpected, but it works so well. The creamy, spicy pepper jack pairs beautifully with the seasoned boudin, while the pepper jelly sauce adds just the right amount of sweetness and tang.
These quesadillas make an easy lunch, dinner, or appetizer when you want something a little different. And since I use gluten-free tortillas, the whole family can enjoy them together.
Boudin Quesadillas
Ingredients
Pepper Jelly Sauce
- ¼ cup apple cider vinegar
- 3 tablespoons red pepper jelly
- 1 teaspoon Dijon mustard
Quesadillas
- 2 links boudin (about 14 oz)
- 2-3 cups pepper jack cheese shredded
- Gluten-free tortillas
- Butter for cooking
Instructions
- Heat the boudin according to the package directions. Once heated, remove the boudin from the casing and set aside.
- In a small pot, combine the apple cider vinegar, red pepper jelly, and Dijon mustard. Simmer over low heat for about 5 minutes, or until the sauce has reduced slightly. Remove from the heat and allow it to cool and thicken.
- Build each quesadilla by adding pepper jack cheese to half of a gluten-free tortilla. Add the boudin and drizzle the pepper jelly sauce over the top. Top with additional cheese, then fold the tortilla in half.
- In a nonstick skillet, melt a small amount of butter over medium-low heat.
- Place the quesadilla in the skillet. Cook for 2–3 minutes per side, or until the tortilla is golden brown and the cheese is melted and gooey. Use a spatula to carefully flip the quesadilla.
- Allow the quesadilla to cool slightly. Cut into wedges and serve.
