Dijon Boiled Potatoes

Dijon Boiled Potatoes

Ingredients

  • 1 1/2 pounds small golden potatoes cut in half
  • 1 tsp dijon mustard
  • 2 Tbs olive oil
  • 2 Tbs butter melted
  • 1 tsp dried dill
  • 1 tsp salt
  • 1/2 tsp thyme

Instructions

  • Wash and cut the potatoes into 1 inch pieces. Add to a 2 quart pot and cover with water.
  • Bring to a boil and let cook for about 10 minutes until fork tender.
  • In a microwave safe dish, melt the butter. Stir in the olive oil, dill, thyme, salt, and dijon mustard.
  • Once the potatoes are tender, drain and toss the potatoes in the sauce.
  • Serve
