Senate Soup

Senate Soup is inspired by the historical Senate Bean Soup which has been on the U.S. Senate menu daily since the early 20th century. This hearty dish is a perfect dinner. It’s made with simple ingredients that come together to create a rich and satisfying meal. 

Senate Soup

Equipment

  • Slow Cooker

Ingredients

  • 2 medium medium onions finely chopped
  • 2 cloves garlic minced
  • 2 Tbs vegetable oil
  • 1/2 tsp dried thyme
  • 7 cups water
  • 4 tsp chicken bouillon
  • 1 pound dried navy beans
  • 1 ham bone *
  • 1 (8 oz) pack Tasso
  • 3 medium carrots peeled and cut into 1/2 inch thick slices
  • 2 bay leaves

Instructions

  • In a microwave safe bowl, add onions, garlic, oil and thyme. Cook for about 5 minutes until the onions are soft. Stirring at one minute increments. Pour into the slow cooker.
  • Add the remaining ingredients to the slow cooker and stir to combine.
  • Cook on high for 8-10 hours.
  • Remove ham bone and Tasso. Allow to cool and shred the Tasso and any ham from the bone. Discard the bone.
  • Return the ham and Tasso to the slow cooker. Remove the bay leaves and discard. Salt and pepper the soup to taste.
  • Serve

Notes

If you do not have a ham bone, use 12 oz of diced ham. 
Be sure to check the chicken bouillon labels for gluten-free.
