5 Bean Salad

This perfect make ahead side dish is just what your next summertime meal needs. It’s sweet, tangy and full of flavor.

5 Bean Salad

Ingredients

  • 1 can cut green beans
  • 1 can red kidney beans
  • 1 can wax beans
  • 1 can black beans
  • 1 can navy beans
  • 2 medium stalks celery finely diced
  • 1 small red onion finely diced
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 Tbs sugar
  • 1 Tbs grainy brown mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Drain and rinse the beans and add to a medium size bowl.
  • In a separate bowl whisk together olive oil, apple cider vinegar, sugar, mustard, salt, and pepper to make the dressing.
  • Pour the dressing over the beans and stir to combine.
  • Place in an airtight container and store in the refrigerator overnight.
  • Allow the bean salad to sit on the counter for about 30 minutes. Stir to combine and serve.
