Cut the chicken into bite-size pieces. Place the chicken in a bowl and toss with the cornstarch until evenly coated.
In a separate bowl, whisk together the honey, gluten-free soy sauce, garlic, the white portions of the green onions, sesame seeds, and red pepper flakes.
Heat the sesame oil in a large skillet or wok over medium-high heat.
Add the chicken and stir-fry until most of the pieces develop a golden-brown coating and the chicken cooks through.
Pour the sauce over the chicken. Stir constantly for 1–2 minutes, until the sauce comes to a boil and begins to thicken.
Remove from the heat and garnish with the remaining green onions.
Serve
