Add the sliced onions to the bottom of the slow cooker.
Next, add the minced mushrooms.
In a measuring cup, mix together the beef stock, garlic powder, thyme, black pepper, salt, and melted butter. Pour over the top of the mushrooms.
Season the pork chops with Cajun seasoning and place on top of the mushrooms. Be sure not to overlap the pork chops to ensure even cooking.
Cover and cook on low for 3-4 hours, until the pork chops are done.
Remove the chops and set aside.
Turn the heat up to high on the slow cooker.
Whisk in the flour until combined and no clumps remain.
Stir in the heavy cream.
Salt and pepper to taste.
Add the pork chops back into the slow cooker and submerge in the gravy.
Cook for an additional 15 minutes.
Serve.
