Smothered Pork Chops

Equipment

  • 6 qt slow cooker

Ingredients

  • 4 (1 inch) pork chops with the bone-in
  • 2 medium sweet onions quartered and thinly sliced
  • 8 oz mushrooms minced
  • 1 1/2 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 3 Tbs butter melted
  • 2 cups beef stock
  • 1/2 cup flour
  • 1/2 cup heavy cream

Instructions

  • Add the sliced onions to the bottom of the slow cooker.
  • Next, add the minced mushrooms.
  • In a measuring cup, mix together the beef stock, garlic powder, thyme, black pepper, salt, and melted butter. Pour over the top of the mushrooms.
  • Season the pork chops with Cajun seasoning and place on top of the mushrooms. Be sure not to overlap the pork chops to ensure even cooking.
  • Cover and cook on low for 3-4 hours, until the pork chops are done.
  • Remove the chops and set aside.
  • Turn the heat up to high on the slow cooker.
  • Whisk in the flour until combined and no clumps remain.
  • Stir in the heavy cream.
  • Salt and pepper to taste.
  • Add the pork chops back into the slow cooker and submerge in the gravy.
  • Cook for an additional 15 minutes.
  • Serve.

Notes

Be sure to read the ingredients for gluten-free. 
This pairs well with mashed potatoes.
