Pan Seared Pork Chops

- 4 bone-in pork chops about 1 inch thick
- 2 Tbs olive oil
- Salt
- Pepper
Cut 2 slits on the fat rind on each pork chop allowing it to remain flat as it cooks.
Salt and pepper both sides to taste.
Put the olive oil in the skillet and heat until hot.
Place pork chops in the skillet and cook for 4-5 minutes. Flip the pork chop and cook for an additional 4-5 minutes or until the internal temperature reaches 145 degrees.
