Jeweled Ambrosia

Ingredients

  • 1 cup grapes sliced in half
  • 1 cup strawberries diced
  • 1 cup blueberries whole
  • 1 cup kiwi (about 2 large) diced
  • 1 (15 oz) can mandarin oranges drained
  • 1 (8 1/4 oz) can pineapple chunks drained
  • 1/2 cup pecans chopped
  • 1 cup sweetened coconut flakes
  • 4 cups heavy whipping cream
  • 6 Tbs powdered sugar

Garnish

  • 4 large large kiwi peeled and thinly sliced
  • 1 cup blueberries halved
  • 1 (15 oz) can mandarin oranges drained
  • 6 large grapes quartered

Instructions

  • In a stand mixer, whip the heavy cream until soft peaks form. Add the powdered sugar and whip until stiff peaks form.
  • In a large mixing bowl, stir together the grapes, strawberries, blueberries, kiwi, mandarin oranges, pineapple, pecans, and coconut flakes. Fold in the whipped cream.
  • Fill the bowls and garnish with fresh fruit.
  • Refrigerate until serving.
