Honey Glazed Carrots

Ingredients

  • 1 pound carrots peeled peeled and cut into 1/3-inch slices
  • 1 clove garlic minced
  • 1 Tbs butter
  • 1 Tbs olive oil
  • 1/4 cup honey
  • 1 Tbs brown sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Pinch of cayenne

Instructions

  • Preheat the oven to 425 degrees.
  • In a medium size bowl mix together the garlic, butter, olive oil honey, brown sugar, salt, pepper, and cayenne. Add the carrots and toss to coat them evenly.
  • Spread the carrots and glaze mixture onto a baking sheet in an even layer.
  • Roast for 20-25 minutes. Use a spatula to stir them halfway through the cook time.
  • Transfer to a serving dish and serve.
