Greek Pinwheels

- 1 cup rotisserie chicken chopped
- 8 oz cream cheese
- 1 Cup feta cheese
- 1 Tbs Greek seasoning
- 8 oz sun-ripened tomatoes drained and chopped
- 1/2 cup shredded cucumber
- 1/2 tsp dill
- Spinach flour tortillas substitute for gluten-free
- Cherry tomatoes for garnish
Peel and grate cucumber. Using a cheesecloth, squeeze the liquid out of the shredded cucumber.
In a stand mixer, whip the cream cheese for about 2-3 minutes. Add remaining ingredients (except the tortillas) and mix thoroughly.
Spread mixture over the tortillas.
Roll and cut into pinwheels.
Use a bamboo skewer to spear a cherry tomato and on pinwheel. Repeat the process until all of the pinwheels have been made.
Serve.
