Wash and cut the potatoes into 1 inch pieces. Add to a pot, cover with water, and generously salt the water.
Bring to a boil and let cook for about 15-20 minutes until fork tender.
Once the potatoes are tender, drain and put them in a bowl.
Add butter to the potatoes. Use a hand mixer to mix the butter into the potatoes. This will mash the potatoes and make them smooth.
Use the mixer to mix in the heavy cream, salt, and pepper.
Taste the potatoes and add additional salt and pepper if needed.
Spoon potatoes into a dish and garnish with parsley if desired.
Serve.
